Eat at least 30 different plants food per week
My diet is mostly vegetarian and for me it is easy to reach the goal of eating at list 30 different plant foods in a week.
Why should I do that? You are asking yourself !
Because there are tons of researches that demonstrate that a diet rich in plant food, with different colors, possibly seasonal and sourced in the area you live, will improve your gut health, digestion, microbiome and immune system.
Plant food is full of fiber, minerals, vitamins and so on!
When I say plant food, I include vegetables, fruits, nuts and seeds .
Today I focus on dark red and purple colored food available this time of the year where I am: Italy.
I went to my favorite green grocer and packed my shopping basket with anythingย I could find dark colored, with the intention of preparing a salad full of antioxidants , polyphenols and fibers, sweet and bitter at the same time.
Polyphenols are great to protect your cells from free radicals , reduce inflammations and help with blood sugar levels .
All that said, let’s get to the recipe!
This quantity are for at least 4 people:
1 head of radicchio ( for the bitter taste)
1 hand full of any green salad you like
I’ve used “Mache”, mild and sweet
a small bunch of red seed less grapes sliced
an hand full of fresh pomegranate seeds
3 or 4 radishes thinly sliced
1 purple carrot sliced with potato peeler
1 red carrot thinly sliced
1/2 red pepper chopped small ( capsicum)
1 purple potato boiled and chopped
few walnuts
Optional : a piece of feta to crumble on top
For the dressing I’ve just used a classic:
olive oil
balsamic vinegar
1/2 tsp of honey
salt to your taste
You don’t need anything else!
